Autumn time is harvest time for celeriac
Celeriac - the vitamin-rich and healthy root vegetable - can remain in the bed until autumn, because the tubers are still growing until the end of October. The harvest should be finished before the first frosts.
Remove the tubers, remove the roots and foliage by cutting or twisting. Store the celery unwashed in boxes of moistened sand. Occasionally check the tubers for rot.
Some gardeners report hibernating the tubers in the bed and harvesting them as needed. Then cover the plants thick with leaves or straw.
