If you have several limes at home and want to preserve them as long as possible, just freeze them. There are three variants - but there are a few things you should keep in mind to make sure the fruits remain edible.
Method 1: Freeze limes as a whole

The second method is to freeze not all the limes, but only their pulp. This is how it works:
- Halve the limes. To do this, use a sharp kitchen knife. Scrape out the lime peels. A big spoon will serve you well. Slide the pulp directly into a sealable container suitable for your freezer. Be careful not to put too many limes in the same box. Guide value: two to three pieces per container. Close the box (s) and place in the freezer.

- Squeeze out the limes. You can use a manually operated juicer or - more pleasant - an electric juicer. Fill the resulting juice into an ice cube container. Put the ice cube container with the lime juice in the freezer compartment.

Users in Internet forums often recommend quartering, dicing or slicing limes and freezing them in the mold. We advise against that, however. These variants promote the loss of vitamins and severely affect both consistency and appearance.
In general, keep in mind that freezing and thawing causes limes to lose both vitamins and flavor (around 30 percent of the juice is lost). This is normal and applies to any fruit that you store in the freezer and thus want to make it more durable. In addition, the lime after thawing brownish and soft.
