When is harvest time for Kakis?
The harvest of the kaki fruit takes place between September and November. It depends on the species and the region. For optimum taste, the fruit is left hanging on the tree for as long as possible, even if it has long lost its leaves.
To reap the fully matured Kakis in their own garden, remains in this country rather the exception. The fruits should stay as long as possible on the tree, they tolerate some frost. If the kaki fruit gives way to light pressure and its shell lights up strongly orange, it can be harvested.
Kakis ripen
The immature harvested fruits can ripen in the house. When stored next to the apples that secrete much ethylene, the kakis quickly soften and develop their full flavor. The unripe fruits contain tannins and cause a furry feeling in the mouth. The ripe fruits, however, taste very juicy and sweet.
Tips & Tricks
The Israeli-grown Sharon fruit contains no bitter tannins and can also be eaten in the hard state.
