Originally, there were probably a dozen types of kale, but the variety is decreasing and more and more than 10 varieties are known today - and even those only in traditional growing areas in northern Germany. Learn more about what these are and what makes the kale.

Kale is also known as lignite or curly kale and is nowadays grown mainly in Central and Western Europe, Africa and North America. Originally it probably comes from the Atlantic and Mediterranean coasts and, like all types of cabbage, is a descendant of wild cabbage.

In the trade you will find different varieties of kale, which differ in their foliage shape and color as well as their frost hardness and stature height. Most kale varieties are harvested after the first frost, because then there are fewer bitter substances and more sugar in the leaves. An exception is the Italian variety Nero di Toscana, which can also be harvested before the frost. In addition, it is ideal for bucket farming.
