Although there may well be one or the other option in this regard, goji berries, like other fruits, should either be consumed as quickly as possible or processed directly and preserved accordingly. This is the only way to best preserve the high quality together with the vitamins and other valuable ingredients. However, Goji berries, for example, are less sensitive than raspberries when it comes to storing them after harvest for a few days before further processing.


Various options for preserving goji berries

Goji berries can be processed and preserved in different ways:

Juice extracted from goji berries will last a little longer in the fridge than a bowl of fresh berries. However, heating it for preservative purposes also involves a loss of valuable ingredients. When making juices and marmalades, sweeter fruits or sugars should be added as the Goji berries themselves are not known for their sweet taste.

Freeze Goji berries properly and dry

For drying goji berries, the green cliff is removed and the berries are placed on absorbent kitchen paper in the sun. Every few hours the berries should be turned so they can dry evenly. Alternatively, Goji berries can be dried in the oven, which is at a maximum temperature of 40 degrees Celsius, whereby the door of the oven should remain ajar for the escape of moisture. So that goji berries do not clump together to a large, inseparable mass during freezing, you should first freeze the berries on a tray. Sometimes it may be helpful to leave the green stems for storage in the freezer on the berries.
