Clean mushrooms and peel

Mushrooms, like all other mushrooms, are very sensitive foods. If they are not handled with care, they will quickly create unsightly bruises that turn dark. But with small tricks your mushrooms remain handsome and can be prepared appetizing. For example, never pour the mushrooms from the basket into the workplace. The delicate flesh could get dark spots, the hats could tear off. Instead, remove each fungus one by one from the basket and clean it carefully.
White or brown mushrooms are always cleaned before processing, even if the specimens from the supermarket are only slightly dirty. If the mushrooms are to be marinated, they are also peeled, as the marinade penetrates better into the pulp.


    First cut off the dry end of the mushroom stalks. Take a clean brush and brush off any dirt particles from the mushroom hat. Carefully turn the mushroom over and hold it by the stem. Now you can also rid the slats of dirt. Now put your knife on top of the mushroom hat and scratch the skin from top to bottom. Make several fine cuts, but only scratch the skin. Now pull the skin from strip to strip from top to bottom.

Once the mushroom has been peeled you should continue to process it immediately. If you do not want to process your mushrooms right away, it is best to keep them in a dirty condition. Bear in mind, however, that mushrooms have a limited shelf life.

Tips

Mushrooms are not cleaned with water, ie no water bath for cleaning, no brewing under the water crane.
The mushrooms would soak in the water like a sponge, they would be soft and mushy, their aroma washed out.
Although the mushrooms do not soak up under running water immediately, the water inevitably flushes the aromas into the drain.
