How does winter savory overwinter?
The one-year summer savory will not overwinter even with the best frost protection. It has to be sown again next spring. Hillbeam herb, on the other hand, is hardy and easily drifts again in the new year with rising temperatures.
Does savory need winter protection?
In a normal winter, mountain savory needs no special protection. Do not cut it in the fall, leave all woody parts. Only in spring cut off all old and withered shoots, so that the herb expels again.
Only in extreme cold winter protection is recommended. Cover the savory with leaves or a fleece and remove it in time, as soon as the temperatures rise again to freezing.
