Store truffles

White truffles

White truffles smell intensely of honey, hay and wet earth. They are more sensitive than the black specimens and should be eaten quickly. For a short time, however, you can store the mushrooms in the smallest possible tin or a glass, wrapped in kitchen paper, in the refrigerator. The paper absorbs moisture and needs to be changed daily, otherwise the truffle could soften. Choose the coolest compartment for storage. The optimum storage temperature is approx. + 2 ° C. Despite this, the white truffles continuously lose their aroma and weight during storage.


Black truffles

Black truffles have a strong scent of mushroom and some musk. They stay longer in the fridge than the white truffle. Even if the black truffle shows some mold, it can be brushed off. Also for the black truffle a dry, rather cool storage in kitchen paper is recommended. Maintain your truffles wisely, then stay fresh in the fridge for ten days.

Freeze truffles

If you want to play it safe, freeze your truffles. The valuable mushrooms keep airtight frozen for up to a year, but lose some of its aroma and weight. When freezing, do the following:
