When does Jerusalem artichoke season?

The tubers of the sunflower-like Jerusalem artichoke plant can be harvested all year round. The high season of the harvest, however, is the fall, because at this time of year, the tubers are particularly plump due to the good irrigation by the autumnal rain and also the soil is not frozen as often in winter, which would make the harvest difficult.
Jerusalem artichoke tubers are, like any root vegetables, very storable. If you follow the instructions below, you will have the delicious vegetables at hand at all times at home.

Store Jerusalem artichokes in sand

Topinambur tubers are optimally stored when they are buried in moist sand. This will last for several months. To do this, proceed as follows:


    Select uninjured tubers as Jerusalem artichokes are not durable with cuts or putrid spots. For example, brush earth from topinambur with a vegetable or nail brush. The roots are left on the tuber. Fill a wooden box with wet sand. Lay the Jerusalem artichokes side by side and cover with sand. Place the box in a cool, shady spot, such as the pantry, garage or garden shed. Check regularly if the sand in the box is still wet enough.

Keep Jerusalem artichokes in the fridge

For the short-term storage of Jerusalem artichokes, the refrigerator is also suitable. Do not wash them, as it promotes rot and mildew. Leave the soil on the tubers, place them in the vegetable compartment and cover with a damp kitchen towel. Stored in this way, Jerusalem artichokes are preserved for around two weeks. Carefully check the tubers for signs of rot before use.

Freeze Jerusalem artichokes

If you want to keep the Jerusalem artichoke fresh for up to a year, you can freeze it. Only a few steps are required for this:


    Clean and peel the tubers and cut into cubes. Put a sufficiently large pot on and bring salted water to a boil. Blanch the Jerusalem artichokes for about three minutes in bubbly boiling water. Then pour it off and discard it in ice water. Now spread the fully cooled Jerusalem artichokes on a wooden board and push it into the freezer for two to three hours. This will prevent them from freezing to a lump. The pre-frozen cubes can now be transferred to freezer bags or lockable freezer boxes to save space and put back into the freezer immediately. You can now remove the required amount from the containers and should use the stock within one year.
