Air celery leaves in air

    Cut the leaves off your fresh celeriac. Wash them thoroughly. Shake the leaves dry. Grab a string and tie the celery leaves into a bundle. Hang the bundle in a dry and warm place. Allow the leaves to dry for about three days. Take off the bundle. Chop the pre-dried celery leaves with a small knife. Spread the finely chopped leaves on a baking tray lined with baking paper. Let the celery leaves dry in this way for another eight to ten days.

Tips

That the leaves are completely dry, they recognize that they can easily crumble between the fingers.

Dry celery leaves in the oven

    Preheat the oven to 100 degrees Celsius. Pluck the washed celery leaves from the stems. Put them on a tray lined with baking paper. Turn the oven temperature back to 60 degrees Celsius (convection). Push the tin with the celery leaves into the oven. Leave the leaves in it for ten minutes. Get the sheet out of the oven. Apply the sheets on the tin. Put the tin in the oven for another ten minutes. Repeat the procedure until the leaves are completely dry. Mince the dried leaves.

Store dried celeriac leaves optimally

Fill the dried and crushed celery leaves in an airtight glass - preferably mixed with salt (ratio 40:60). The extracted herbal salt is stable for many months.
