Harvest and prepare rosemary

Either pick whole sprigs of rosemary or single needles, using only healthy and undamaged plant parts. Withered or dried needles are removed. The best time to harvest is late morning or noon on a sunny day as the plant contains the highest concentration of aromatic essential oils at this time. Wash the rosemary under running water and then dab it carefully with a clean kitchen towel. The further preparation now depends on the chosen method of freezing: If you want to preserve the rosemary stains as a whole, then further preparation is not necessary. Otherwise, you can now pick the needles and shred as desired, z. B. with a pair of scissors, a sharp knife or a food processor. However, crushed, frozen rosemary contains significantly more essential oils and thus flavor than minced.

To do this, simply pack the washed and dried rosemary sprigs into a freezer bag and then into the freezer compartment. The frozen needles can be easily removed from the stalk and crumble.

Rosemary can freeze as a whole branch or crushed, and it should be used up within about two months. Although the herb stays frozen for up to a year, it loses its flavor over time. Crushed (i.e., chopped) rosemary can be blended well with other herbs, such as thyme, oregano, and parsley. Try experimenting a little bit with it to put together your own herbal mixtures. Crushed rosemary should be stored in freezer boxes, but you can also use ice cube trays for easier portioning.
