Mushrooms generally like it cool and airy. You should already pay attention to this when transporting from the market to your home. It is advisable to put the vegetables in an air-permeable container immediately after purchase. So you already create the first good conditions for keeping the mushrooms in excellent condition for a few days.

How to store mushrooms optimally

There are several things you should keep in mind if you want to preserve mushrooms:

Do not squeeze

Mushrooms have a high water content and are quite sensitive to pressure. Therefore, it is extremely important not to squeeze the vegetables. Otherwise, the fungi get easily bruised and rot faster.


Store in a cool place

Store your mushrooms in a cool place. Ideal is the storage in a basement or in an unheated pantry. Alternatively, you can store the vegetables in the fridge - preferably in the vegetable compartment.

Tips

In cooler outdoor temperatures (in late autumn and / or winter), mushrooms can also be stored overnight on the balcony or terrace.

Store in a dark place

Darkness is also an important issue. Too much light (sunshine) will make your mushrooms worse quickly. Make sure you choose a location in the basement or attic that is not near the window.

Store airily

The airy storage is one of the most important points. Never put your mushrooms in a plastic bag or plastic container. In it the vegetables rot quickly and can even develop toxic substances. It is better to keep mushrooms in paper bags or simply to carry them into a basket that is laid out with some newspaper.


Note: The basket with newspaper refers to the storage outside the refrigerator, the paper bag to the storage in the refrigerator.

In the fridge, mushrooms stay fresh for one to two days; In the cellar or in the pantry, they generally hold themselves four to five days.

Important: Purchased mushrooms are usually penned in a plastic bowl and also covered with foil. Remove the latter immediately after purchase or at the latest when you arrive at home.

To keep mushrooms for months

There are also two ways to preserve mushrooms for several months:

Freeze mushrooms

Clean, cut and blanch the mushrooms, then dry well and portion into airtight sealable freezer bags. These bags then put in the freezer. Frozen mushrooms are edible for up to six months. Do not thaw the vegetables, but add them directly to the fresh ingredients in the pot or pan.

Dry mushrooms

Clean and cut the mushrooms. Then place it in the oven for about five hours at about 40 degrees Celsius with the oven door open. Alternatively, you can also use a dehydrator well. It works more efficiently than the oven. After drying, store the mushrooms in an airtight container.
