If you have planted olive oil in your garden, you should wait with the first harvest until a vigorous bush has formed. Then you can regularly harvest and dry the branches of the herb. When drying, you should proceed as gently as possible, so that the herb loses only little aroma.

- Shed clean, fresh branches. Wash them and dry them well. Bundle the branches and hang them upside down in an airy, warm, but not sunny place. After a few days, when the dry leaves are easily removed from the stems, the drying process is finished. Put the dried olive oil in airtight cans or glasses and keep them dark.
