With proper storage, olives are long lasting

Fresh olives are inedible due to the bitter substances contained and must therefore be debittered first. Then you can put them in brine, vinegar or olive oil and make them so preserved.

Always sprinkle fresh olives

Before you can store and enjoy olives, you need a little patience. The drupes are extremely bitter and therefore do not taste good. However, their bitter substances can be removed by placing them in water or brine. For this dissolve 500 grams of salt per liter of water and cover the olives - previously cut several times or "knocked" - completely with this brine. The solution should be changed daily and the container should be placed in a dark and cool place. Debittering can take several weeks, depending on how bitter or mellow the fruit is.

Insert olives

Once the olives have been debittered, you can start putting in the fruit. Before doing so, you can remove any excess salt from them by bathing them in clear water for a few more days. To insert, take a clay pot with a well-closing lid or a mason jar with the appropriate cap. It is important that the fruits are completely covered by olive or sunflower oil, as this prevents the ingress of air. Keep in mind, however, that some oil can quickly turn rancid, which is detrimental to shelf life. A dark and cool location prevents oxidation and thus also that the oil and the olives are getting bad.

Preserved, bought olives should also be stored in a dark and cool place. If you do not want to keep your olives in oil, then you can alternatively make them with salt, d. H. pökeln. If possible, olives should not be frozen as this causes loss of taste - frozen olives become soggy and often bitter.
