Freeze muffins
To freeze muffins, you do not need to worry about anything except that they should be completely cold. Because paper muffin cases often stick to thawed or baked muffins, you should remove them before they are frozen or bake the muffins directly in a muffin tray without paper cups.
Place the muffins loosely in a container suitable for freezing, ie a plastic or stainless steel box. Seal these carefully and label them with the contents and date of freezing.
Frozen muffins remain stable and delicious for at least three months.
Thaw muffins
To keep the muffins juicy and fluffy after freezing, you have two options for thawing them:
Thaw in the refrigerator
Place the freezer container with the muffins in the refrigerator unopened. The muffins will take a few hours to thaw in this gentle way, but stay nicely juicy. In addition, they remain chilled during the entire thawing process, whereby harmful microorganisms have no chance to multiply on the muffins.
If you want, you can heat the thawed muffins to make them taste freshly baked. Put it in the microwave for half a minute. Alternatively, they come on the bread roll attachment of the toaster or for a few minutes at low temperature in the oven.
Bake in the oven
The frozen muffins can be placed in the oven for a short time to thaw or bake. The oven temperature must not be too high, otherwise the muffins will become too crisp. 150 ° C is enough. After about fifteen minutes, the muffins are warm and slightly crunchy. Longer you should not leave them in the oven, because the muffins dry out otherwise.
Alternatives to the frozen muffin: cake in the glass
If you already know that you will not eat the muffins immediately, there is an alternative: long-lasting muffins or cake in the glass.
- Fill the prepared muffin dough into greased screw or ironing jars. The glasses may be filled to a maximum of two-thirds, since the dough still rises. Place the jars in the oven and bake the dough as directed in the muffin recipe. Remove the ready-baked muffins in the glass with oven gloves from the oven and seal the still hot glasses immediately. If the dough has risen too high, cut it off with a clean knife at the top of the glass.
Due to the sterile vacuum in the glass, cakes and muffins prepared in this way can be kept uncooled for four weeks. You can either spoon them out of the glass or topple them if you have used suitable glasses.
