Horseradish in Germany is usually harvested in late autumn. Since the roots have the highest degree of severity right after the harvest and slowly lose their storage, the peak season for fresh horseradish in the kitchen lasts from November to February.

In February and March, the farther side roots of horseradish can be planted in the soil for a new growing season. These rapidly develop green leaves, with whose energy the roots grow up to fall to a stately size.

If you can not consume the fresh horseradish after harvesting within a few weeks, then put your roots in wet sand.
