The immature harvested kaki fruits can be stored for several months. In the cool and dark place, the caci are constantly ripening, losing the tannins, which make them taste bitter, and gaining in flavor.

Kakis, which are among the climacteric fruits, are usually harvested immature in the countries of origin. In this state, the solid fruits can be easily stored and transported over long distances. Before they go on sale, they are artificially ripened. This approach allows us to enjoy fresh, vitamin-rich kaki fruits during the winter months.

Storage at room temperature is not recommended as the fruits may dry out. In Asia, the kakis are indeed used in the dried state, however, the exotic fruits taste delicious with their crisp shell and juicy pulp in fresh condition.

The fruits intended for early consumption can be stored for some time together with apples, which are known to accelerate the ripening by the high ethylene output. If a kaki fruit still tastes bitter and furry, a short freezing in the freezer helps to reduce the tannin content. However, the effect of cold also changes the consistency of the fruit to the detriment. They become very soft and taste slightly watery.

It is best to leave the kakis from their own harvest on the tree as long as possible. When the outside temperature is cool, they will continue to ripen when the tree has long dropped its foliage.
