Is the thistle poisonous?
Many thistles can be used in the kitchen as parts of the plant are edible. Some of the native species are even considered medicinal plants. Some plant parts are even poisonous, such as the silver thistle root.
Since garden thistles are mostly prickly, you do not have to worry about parts of the plant being inadvertently consumed. Enjoy the decorative flowers. Often these are blue, a not too common color in flowering perennials and thus particularly attractive. You should only remove your thistles if you do not like these types of plants.
