The fewest bamboo species are poisonous. The toxic substances are mainly found in bamboo seeds and raw bamboo shoots. They contain the cyanogenic glycoside Dhurrin - the toxic cyanide of hydrocyanic acid. This produces the bamboo when it is injured to protect against predators. Hydrocyanic acid blocks cellular respiration. It works much like carbon monoxide.
