Fresh mushrooms and mushroom dishes have nothing to look for outside the fridge. You should clean the mushrooms as soon as possible and then either process them or store them for one or two days in the vegetable compartment of the refrigerator. In order for the sensitive mushroom protein to last longer and not decompose so quickly, it needs a dark, cool and above all dry storage room. Furthermore, the mushrooms must not be packed in plastic or aluminum containers, at best, wrap them in a dry cotton or linen cloth. Above all, moisture leads to rapid deterioration and favors mold growth.


To preserve oyster mushrooms

If timely processing of oyster mushrooms is not possible, you should instead quickly preserve them by freezing or drying them. Again, it depends on the time factor: For this purpose, only flawless, absolutely fresh mushrooms are suitable, which should not be temporarily stored in the refrigerator for a long time. For freezing, it is best to use a freezer, which allows rapid blast freezing to temperatures of at least minus 18 ° C. Under such conditions, frozen oyster mushrooms are stable for up to six months. You can also freeze already prepared mushroom dishes, as long as they are quickly cooled down and shock-frozen - ideally immediately after preparation.

Tips

It is sometimes recommended in women's magazines to slice the mushrooms and thread them onto twines for air drying. However, this is not a suitable method for drying mushrooms, as they can easily spoil and mold in this way.
