Fresh mangetouts have only a short time in early summer season. However, you can preserve your crop or pods bought at the grocery store by freezing and enjoy them all year round.
What are snails and what are they used for?
Mangetout peas are immature harvested pea pods. This means that the peas are not yet mature, so there are tiny little Erbschen in the shallow pods. As the French term "mange-tout" ("eat everything") reveals, mangetout peas can be eaten completely. The terms Kaiserschote and Zuckererbse refer to the same vegetables.
Sugar peas taste briefly cooked, for example, in fresh stir-fry dishes, but can also be eaten raw, for example, as a crispy-sweet ingredient in salads.
Prepare mangetout peas
Before further processing or freezing, the sugar snap peas must be cleaned:
- Wash the pods thoroughly and dab dry with a kitchen towel. Cut off both ends of the sugar pod: the flower and stalk roots. Some varieties have a laterally extending fixed thread. If necessary, remove it. If desired, halve or thirds the frozen peas before freezing to get the right size for later processing.
Blanch the sugar peas and freeze
In order to preserve the beautiful green color and crunchy texture of the mangetout, you should blanch them before chilling. This is how the sweetness of the pods comes into its own.
- Bring vigorously salted water to a boil. Let the sugar snap peas boil in it for three minutes. Remove the pods and put them in ice water for a moment. So they do not cook and get their color. Fill the completely cooled and dried peas into freezer bags or freezer boxes with lids. Close the containers carefully, label them with the freezing date and place them at -18 ° C in the *** freezer compartment.
Thaw frozen sugar snap peas and process
If you want to use the pods for a cold dish, just pull the freezer out of the freezer the night before and put it in the fridge unopened. This way, the sugar snap peas can thaw slowly and gently, without harmful germs multiplying on them.
If you want to use the sugar peas heated, process them frozen: just put the sugar peas in the saucepan or the hot pan. After a few minutes, they are warmed up and cooked together with the rest of the dish.
Frozen mangetouts should be consumed after one year at the latest, otherwise they will lose their appetizing texture and taste over time.
