Dry mushrooms - methods and tips

Umbrella mushrooms owe their name to the umbrella-like shape, which makes them look very pretty. They are among the most popular edible mushrooms in our latitudes. This article informs you about how to dry mushrooms and preserve them for months. In this context, it should be noted that freezing does NOT make sense for this vegetable.

So you can dry umbrella mushrooms

There are several options to dry mushrooms:

Dry mushrooms in the dehydrator

    Clean the mushrooms and remove black and slimy spots. Remove the stems from the mushrooms and set them aside (do not throw them away!). Cut the hats along the slats in a pie shape and apart. If you prefer slicing them, you can do so without hesitation. Distribute the pieces on the floors of your Dehydrator. Activate the machine (follow manufacturer's instructions). While the dehydrator is working, you can cut the stems into small wheels (just against the fiber). As soon as the pieces of the hut are dry, you also carry the stalk wheels in the machine. Put the dried stem wheels into a coffee grinder or mortar to grind into spicy powder.

Dry mushrooms in the oven and in the air

    Clean the mushrooms and remove black and slimy spots. Cut the mushrooms into thin slices three to five millimeters thick. Distribute the slices evenly on a sheet of baking paper. Put the mushrooms in the oven for about 20 minutes. The temperature should be constantly at 40 to 50 degrees Celsius and the door should be open a little so that the moisture can escape - just clamp a wooden spoon in between. Remove the mushrooms from the oven and lay them out on newspaper. Allow the mushrooms to dry in the midday sun for three to four days (only!).

Note: If you only dry the mushrooms in the oven, you will probably get a very unsightly and tasteless result - namely black and hard copies.


In general, it is important that the mushroom pieces do not touch each other during drying - and that you turn the slices or pieces regularly. If necessary, replace the newspaper every now and then.

Air mushrooms in the air

    Prepare the mushrooms as usual (wash and cut). Spread the pieces on a grid lined with baking or newsprint paper. Place the grille in a dry, airy room.

Tips

If the mushrooms rustle audibly, they are completely dry.

Store dried umbrella mushrooms

Store dried umbrella mushrooms (also mushroom powder) in airtight, at best dark glasses.
