Sorrel: time and importance of flowering

On many heavily fertilized meadows, the flower sips of the sorrel tower up to a meter high in early summer. Between May and June, the flowers provide red spots of color amidst the green meadow landscape.

The rather inconspicuous single flowers of the sorrel stand out in long, reddish panicles on a stem from the plant. Since the seeds are stable for up to three years and remain germinable in manure, the sorrel spreads uncontrollably under suitable conditions.

Harvest fresh green leaves from the sorrel before flowering from May to July. Then even less of the stomach-irritating oxalic acid is contained in the plants.
