Freezing beetroots - the red tuber only cooked frosten
The earthy taste of beetroot is not for everyone, but it's always healthy. Fresh tubers can be harvested from the garden soil from July to October. A few of them may be temporarily entrusted to the freezer.
Long storage time by freezing
Although the beetroot can be stored in the refrigerator for up to four weeks, freezing is still worthwhile. In freezing temperatures, the healthy tuber is still much longer lasting. So the enjoyment of your own harvest can extend over months.
Do not freeze in raw condition
Beetroot is a sophisticated tuber when it comes to freezing. It must not be frozen raw, and even the quick blanching is not enough. These vegetables must be cooked in a freezer before storage. Do not worry, after that you will still get plenty of healthy ingredients.
A few tubers and a few kitchen utensils
You can either pick fresh tubers directly from your garden soil or buy them cheaply on the market in autumn. To prepare for the frost in the freezer, you'll need some useful kitchen utensils:
Cooking tubers - step by step
- Clean the tubers with the vegetable brush from adhering dirt particles.Put the cleaned beetroot in a saucepan and add half of it to cold water. Bring the water to boil and then simmer the tubers at low speed for 30 to 60 minutes depending on size. If the peel dissolves easily, the beetroot is sufficiently cooked. Peel the cooled tubers. Cut the beetroot into small cubes or slices.
Tips
Direct contact with beetroot causes red fingers. These liberate you with some lemon juice easily from the unwanted coloring.
Portioning, packaging and storing
The intense taste of these tubers we mostly enjoyed in small quantities. It therefore makes sense to divide the pre-cooked pieces in smaller portion units and freeze separately. Packed so handy, beetroot can also be better stored in the freezer.
Label all containers, whether freezer bags or cans, so you can always identify the contents and check the shelf life.
Durability and thawing
Beetroot retains its color and healthy ingredients in the freezer for eight months. It is only slightly thawed before use.
