What is a refinement?

In a refinement, a so-called Edelreis - d. H. a young shoot - taken from a perennial tree and grafted onto another shoot. The lower shoot is referred to as a "base" and should only form roots and trunk. From the precious rice, the actual tree is created, which also forms the fruits. Why is it refined?
