The Philippine mangoes, on the other hand, remain green, even when they are ripe. Deep red solid mangoes are believed to come from Brazil, they are still immature, even if they do not look that way.

Mangoes are great for raw consumption. They can thus be processed well in an exotic fruit salad. However, only ripe mangos taste really good. Ripe mangoes are easily pressed in with a finger and smell very aromatic. Often they have small dark spots on the shell.

Mangoes can also be processed very well to chutneys, jam or compote. In India, they are part of many different dishes and the kitchen is indispensable. Refine a sauce or a curry with it. The fine acid harmonizes perfectly with a slight sharpness.
