Dried grated coconut can be used in many ways in the kitchen: for baking or cooking, for refining desserts or sauces. They are simply self-dried and so much tastier than bought in the trade.

Open the coconut

For beginners, opening a coconut is not easy. Drill one of the three seed holes to remove the coconut water. This you can drink fresh, use for cooking or baking. Prepare the coconut meat to dry

The coconut meat can be solved with a kitchen knife relatively easily from the hard shell. On the outside, a dark skin adheres to the pulp. Although this is edible, it may limit the subsequent use. Therefore, you should remove this skin as a precaution with a peeler. Then grate the coconut meat roughly with a grater.

The drying process

Spread the fresh grated coconut in a layer not too thick on a baking sheet lined with baking paper and push the tin into your oven. Do not completely close the door of the oven, but leave an opening through which excess humidity can be drawn off. This can be achieved, for example, with a wooden spoon, which you clamp in the door opening.


Now dehydrate the grated coconut at 57 ° C for about eight hours. To remove the rasp only the water, they are nice and dry, but remain light. From time to time use the grated coconut so that really all dry and no moisture left, otherwise there is a risk of mold growth.

The alternative to dehydration is drying at 120 ° C for 10 to 15 minutes. At this temperature, a slight browning of the rasp can occur, and the taste changes a little. However, this is not necessarily a disadvantage, because sometimes the roast taste is quite desirable.
