When is kaki ripe?
Depending on the variety, the ripe kaki fruits are colored in a more or less strong orange, soft and sweet. In the immature state, they can contain bitter tannins, which are lost through the ripening process.

If you get to such a fruit, temporary storage of kaki in the freezer compartment helps to get rid of the harsh taste. The pulp, however, is very soft due to the frost effect. The Sharon and Persimonfrüchte fruits, however, are edible even in the hard state, as these varieties contain virtually no bitter tannins. They can also be stored for a long time.
Ripening and consumption
In commercial cultivation, the fruits are harvested immature. In this way, they can be stored for a long time and transported far. Immediately before the sale, they are ripened using the ripening gas. As a result, the fruits lose the tannins without losing their firm consistency.
The shell of the kaki fruits is firm, smooth and shiny. It can be eaten without hesitation, gives the otherwise very soft fruit something "bite". However, if you find the firm consistency distracting, you can cut open the fruit and spoon it out, so that the shell is not consumed.
