Can you freeze tarragon?

With herbs, almost every dish can be improved in taste and whoever has it freshly available can be lucky. For all others, frozen herbs are an attractive alternative and tarragon is no exception.

As the flavor of the frozen tarragon decreases over time, it should not remain frozen for too long, until the next spring at the latest. Then you can reap the first new shoots again. For freezing, choose the time just before flowering, then the aroma is most intense and there is still a lot of flavor left on thawing.

Preparing for freezing

Harvest your tarragon on a warm sunny day, late morning or early afternoon. Then the flavors are particularly highly concentrated. Ideally, it has not rained for a few days. Now cut the fresh shoots. Pay attention to undamaged leaves. They should not be eaten or discolored.

As with drying, you should remove the stalks of the tarragon before freezing. The cleaned leaves can be completely or cut into small ice cube trays, some water may be added and placed in your freezer or freezer.


After the cubes are frozen, fill them into larger, more aroma-safe freezer containers. So you always have small portions of tarragon handy, but do not have to look awkward for small jars in the huge chest.

Use of the frozen tarragon

You can use frozen tarragon in heated foods in much the same way as fresh herbs. When cooking a soup or stew, the tarragon does not necessarily have to be thawed before.

If you would like to season a sauce, such as the well-known Bearnaise sauce, use tarragon that you have frozen without water, or dry it well to avoid watering down the sauce.
