Endives are healthy and harvested at a season when low-fresh vegetables are available. By December, some varieties can be brought fresh from the garden. Here's how to best clean, cut, and process your endives from the garden or supermarket.

Both endives from the supermarket and from their own garden are usually polluted with soil, sand and insects. This is especially true for varieties that have rather loose leaves. Therefore, the endive salad must be washed properly before processing:
Dry endives
While you are removing the leaves from the water, you can already check them for brown or damaged areas and remove them. Then put the salad in a salad spinner, drain the leaves in a colander or place on a dry, clean cloth and gently pat dry.
Cut endives
