The first domestic asparagus spears of the year are convincing in taste, but hardly affordable priced. What remains are a few weeks a year, when the price drops and the quality is still right. Now it's time to access and freeze a few rods for later.
When is the time for the freezer?
The annual asparagus season lasts only a few weeks, at least when it comes to local asparagus spears. Imported goods are now almost always found in supermarkets, the long-traveled rods but the quality of freshly prized bars not quite approach.
The "real" asparagus season in May and June is therefore the only true time for connoisseurs to enjoy it fresh. But it is also the best time to stock up on the freezer. Nearly a year goes by until the next harvest, and so the asparagus appetizer can be wonderfully breastfed from the freezer.
Peel slowly or freeze with peel?

- Dip a frozen asparagus stick in hot water for about three minutes. The thin shell thaws in this short time, choosing the interior still frozen and thus remains hard. Peel the peel with a peeler. Continue rod by bar until you have peeled the whole batch.

Be careful when peeling frozen as the rods are very fragile in this condition.
Durability and use
