How can kiwis ripen?

After harvest

The greenish kiwis with hairy shell have more acidity. The gold kiwis with yellow-green flesh taste much more tender and sweeter. They contain less actinidin - the enzyme that makes the milk products taste bitter - and can therefore be easily processed into quark, yoghurt and milkshakes.
