Mushrooms should not be skinned before cutting

Cut mushrooms properly and clean

Fresh mushrooms - regardless of whether collected from the meadow, grown on a bale of straw in the garden or bought in the supermarket - can be used for soups, sauces and salads. The aromatic mushrooms also taste very delicious in scrambled eggs orin an omelet. So that the sensitive mushrooms do not lose their characteristic taste, you should follow our tips when cleaning and cutting.

Never wash mushrooms

This includes, for example, that the mushrooms should never be washed - after all, they are not without reason in southern Germany as well as in Austria called "mushrooms". Like all mushrooms, mushrooms also contain a lot of water, which is why they shrink vigorously during cooking. You certainly know this effect: From a large bucket of freshly collected mushrooms, only a small portion remains for two persons after roasting. If mushrooms are washed before preparation, they only absorb more water - and lose their aroma as well as their bite, they become "spongy" - soft and more rubbery in their consistency.

Clean mushrooms properly - That's how it works

Instead, mushrooms (like all other mushrooms, by the way) should always be cleaned in the dry state. But how do you get them really clean, should they be dirty? A crunch between the teeth when eating the mushroom pan is not necessarily desirable, after all, no one wants to eat soil or substrate. There are various possibilities for this.

When should you make mushrooms?

Maybe you have also learned or seen that mushrooms are skinned - so the fine skin is removed from the hat. In fact, this is an effective way to clean up heavily soiled mushrooms, but it has the disadvantage of losing many of the nutrients that sit directly under or in the skin. Therefore, it is best not to peel off the cuticle or only if the mushrooms are actually very heavily polluted or if they no longer look so fresh due to numerous pressure points.

Cleaning with a brush

Instead, just grab a clean brush. There are special brushes or brushes available for cleaning mushrooms, but it does a simple, thick bristle brush as well. First clean it thoroughly with water and then let it dry well. The brush hairs should also not be rough, but rather soft. Mushrooms are very sensitive and quickly get unsightly pressure points. Finally, use the brush to remove the coarsest dirt.

Cleaning with kitchen paper

If there is any dirt remaining, you can remove it with a kitchen towel by gently rubbing. Soft paper towels are best for this, but they should be used dry and should never be moistened. By the way, mushrooms should always be cleaned individually.

How to cut mushrooms

When the mushrooms are finally cleaned, you can cut them. The best way to do this is as follows:

Tips

Use fresh mushrooms as possible. These can be recognized by the fact that the slats are still or largely closed.
